AVPN BASIC COURSE — VERA NEAPOLITAN PIZZA: 5 days of practical and theoretical training with the pizzaiolo Verace Peterson Secco, in one of the few houses certified by the Associazione Verace Pizza Napoletana in Brazil.

Who is this course for?

Beginner or professional pizza makers who want to perfect their techniques and follow international standards;
Pizza lovers who value authenticity and quality;
Entrepreneurs in the segment.

In 5 days of face-to-face training, you will:

Master the preparation and handling of dough: types of flour and the use of dough, hydration, fermentation, baking, portioning, resting, and correct opening techniques.
Learn how to assemble pizzas according to the AVPN standard: choosing and handling the best ingredients (tomato sauce, mozzarella, basil and certified ingredients).
Practice cooking in a Neapolitan wood oven: types of oven, blade manipulation, heat and time control to reach the ideal point of true Neapolitan pizza.
Understand and apply, in practice, the official AVPN bases of Margherita Verace and Marinara Verace.

All this inside a certified Neapolitan pizzeria, in real operation, with a professional structure and environment that reproduces the experience of Naples in the Serra Gaúcha.
